2 pounds sweet potatoes
2 poblanos, sliced
2 red bell peppers, sliced
1 pound baby bella mushrooms, quartered
1 red onion, sliced
12oz smoked sausage, sliced
1 pound of chicken and/or shrimp
4 eggs (optional)
Preheat oven to 425. Cut sweet potatoes into 1 inch cubes and toss in oil and seasonings as desired. Bake in oven on foil lined baking sheet until cooked, tossing halfway through, 30-40 minutes.
While potatoes cook, prepare remaining veggies and meat. Cook poblanos, bell peppers, and onion in 1 tablespoon of oil in a non-stick skillet over medium high heat until done. Transfer peppers and onions to large bowl, add more oil if need, and cook mushrooms until browned. Add chicken (if using) and cook until almost done. Add sausage and shrimp (if using) and cook until done. Transfer mushrooms and meat to bowl with veggies. Hold veggies and meat warm until potatoes are done, possibly adding everything back to the skillet to reheat.
Serve veggies and meat in bowl over the potatoes. If desired top each serving with an egg cooked as desired.
